Vegetable prices in Ukraine continue to rise - the borscht set has increased by 52% compared to last year. The most expensive remain greenhouse cucumbers and tomatoes, while onions demonstrate more affordable prices.
Analysts predict moderate increases in the prices of most vegetables before the start of the new season.
Price dynamics of the vegetable market in Ukraine
Monitoring of the main retail networks in Ukraine shows significant price dynamics in the vegetable market. The price of potatoes ranges from 27.89 UAH/kg at ATB to 36.9 UAH/kg at 'Aushan', with an average of 30-32 UAH/kg, which significantly exceeds last year's March level of 22.73 UAH/kg.
The price of carrots reaches one of the highest indicators - on average 38.53 UAH/kg. The prices in the networks are distributed as follows: 'Silpo' - 37.3 UAH/kg, ATB - 33.89 UAH/kg, 'Aushan' - 32.4 UAH/kg, Novus (peeled carrots) - 48.99 UAH/kg.
White cabbage shows consistently high prices: ATB - 44.89 UAH/kg, 'Aushan' - 44.8 UAH/kg, Varus - 48.9 UAH/kg, 'Silpo' - 49.4 UAH/kg. Experts link this to low yields from last season and active reductions in stocks in storage.
The most affordable component of the borscht set remains onions with prices of 12-13 UAH/kg: at ATB - 13.79 UAH/kg, at 'Silpo' - 13 UAH/kg, at 'Aushan' and Varus - 11.9 UAH/kg. Compared to last year, onions are demonstrating a price decrease due to an increase in supply in the market and deteriorating product quality in storage.
Leading the cost among seasonal vegetables are greenhouse crops: tomatoes range from 89.89 UAH/kg at ATB to 104.5 UAH/kg at 'Silpo', while Ukrainian greenhouse cucumbers range from 98.9 UAH/kg (promotional price at 'Fora') to 125.9 UAH/kg at Varus.
A comparative analysis of markets and supermarkets confirms traditionally lower prices in market squares. At the Kyiv market 'Stolichny', potatoes are offered at 18-22 UAH/kg, while in supermarkets they are from 24.80 UAH/kg. However, this difference is narrowing due to the overall rise in food prices and increasing logistics costs.
Price increases and decreases for vegetables
Since the beginning of 2025, the most noticeable increases have been in tomato prices (+10.3%), while the smallest increase has been in beets (+5.4%). Cabbage has risen in price by 7.8%, and carrots by 5.9%. At the same Time, at the end of February and the beginning of March, there was a slight decrease in prices for some items compared to January: potatoes (-4.9%), carrots (-6.3%), beets (-5.1%), onions (-1.4%).
Experts from the Institute of Agricultural Economics predict a slight seasonal increase in vegetable prices in March - up to 5%. The most notable increases may be in white cabbage - up to 52.5 UAH/kg (+2%) and carrots - up to 36 UAH/kg (+2.6%).
'Spring prices for vegetables and fruits will largely depend on the quantity of Ukrainian stocks, imported products, and pricing in foreign markets,' said analyst of the Ukrainian Agribusiness Club, Maksym Hopka.
Specialists expect a gradual decrease in prices for cucumbers due to an increase in the supply of Ukrainian greenhouse vegetables, potential price reductions for carrots if farmer stocks are sold off due to current high prices, and stable prices for onions with adequate supply levels.
The traditional seasonal decrease in vegetable prices is projected with the arrival of the first vegetables from open ground, approximately from May-June 2025.
The European market shows stable dynamics in vegetable and fruit supplies. The USA remains the leading exporter to Europe, predicting a 14% increase in apple supplies in 2025, 20% for grapes, 16% for oranges, 13% for potatoes, and 33% for tomatoes.
Key factors affecting pricing in the Ukrainian vegetable market remain the reduction of stocks in storage, logistics costs, energy tariffs, and the consequences of last year's low yields due to weather conditions.
